Ingredients
  • 1 Onion (Medium)
  • ½ Green Pepper
  • 2 Garlic Cloves
  • 2 Tbl Olive Oil
  • 6 oz Tomato Paste
  • 28oz Can Tomatoes
  • ¼ cup Parsley (Fresh & Minced)
  • ½ tsp Oregano
  • 1 Bay Leaf
  • 6 Lasagna Noodles
  • 10oz Frozen Spinach (Chopped)
  • 1 lb Ricotts
  • 1 Egg
  • ¾ cup Parmesan
  • 1 tsp Salt
  • ¼tsp Pepper
  • 3 oz Mozzarella
Instructions
  1. Saute chopped onion, green pepper, and minced garlic in oil until golden, stirring often.
  2. Add tomatoes, past, parsley, oregano, and bay leaf. Simmer uncovered for 20 minutes.
  3. Cook noodles according to package directions. Drain. Combine cooked, drained spinach,ricotta, egg, ¼ cup Parmesan, salt and pepper.
  4. Spoon ⅓ tomato sauce in bottom of lasagna dish (13x9). Cover with 3 noodles, ½ of spinach-ricotta filling, ½ mozzarella and ¼ cup Parmesan. Repeat layers. Top with remaining sauce, Parmesan and Mozzarella.
  5. Bake at 350F for 45 minutes. Let stand a few minutes before cutting into squares for serving.
