  • 9 Eggs (Separated)
  • 1-1/2 cup Sugar
  • 1 cup Matzo Cake Meal
  • ½ cup Potato Starch
  • Juice & Rind of 1 Lemon
  • Juice & Rind of 1 Orange
  1. Beat yolks until light yellow. Add sugar and beat well. Sift flour and starch together. Add to egg mixture alternately with juices. Add rinds.
  2. Beat egg whites until stiff a carefully fold in.
  3. Bake in tube pan at 325F for 1 hour and at 350F for 10 minutes. Remove from oven and invert and let cool completely before removing.
