Vegetable Soup

  • ¼ cup Onion (Diced)
  • 1 tsp Garlic (Minced)
  • 1 cup Zucchini (Thinly Sliced)
  • ½ cup Carrot (Thinly Sliced)
  • ½ cup Tomato (Chopped)
  • 1 tsp Parsley
  • ¼ tsp Basil
  • 2 cup Water
  1. In saucepan combine onion and garlic and cook till translucent. Add remaining ingredients except water. Cover and cook on low for 10 minutes, stirring occasionally. Add water.
  2. Bring to a boil. Cover and cook over low heat for 20 minutes. Remove about ½ cup of veggies and set aside. Puree remaining vegetables. Return to pan and add reserved veggies.
