Chicken in Wine Sauce w/Tomatoes

Ingredients
  • 6 Chicken Breasts (Bonned & Skinned)
  • Flour
  • 1 Onion (Diced)
  • ½ lb Mushrooms (Sliced)
  • 4 Tomatoes (Peeled, Seeded, & Quartered)
  • pinch Marjorar
  • pinch Rosemary
  • 1 cup White Wine
  • 1 cup Chicken Stock
  • 2 Tbl Parsley (Minced)
  • 1 oz Brandy
Instructions
  1. Flour chicken breasts and brown in butter with the onions. Add Mushrooms, tomatoes, and spices. Cook for a few minutes. Add wine and chicken stock.
  2. Reduce heat and cook covered about 25 minutes or until chicken is done. Add parsley and brandy. Stir and Serve.
