  • 4 Eggs
  • ¾ cup Shortening (Melted)
  • ¾ cup Sugar
  • 1 Lemon (Juice & Rind)
  • 4 cup Flour (Sifted)
  • ½ tsp Salt
  • 3 tsp Baking Powder
  1. Combine first 4 ingredients in deep bowl and beat until smooth. Next sift together the dry ingredients and combine with the mixture in deep bowl till it forms balls of dough. Turn out onto board.
  2. Roll and cut into 2-1/2 inch rounds using a biscuit cutter. Place a rounded tablespoon of filling in the center and turn up the edges to form tricorns making three seams. Start at top center an pinch together securely down toward the three corners.
  3. Brush tops with melted shortening, egg yolk mixed with a little cold water or bake plain.
  4. Bake at 350F for 25-30 minutes or until nicely browned.
