  • Crust
  • 1 cup Butter
  • 2 cup Flour
  • ½ cup Powdered Sugar
  • Lemon Filling
  • 4 Eggs, slightly beaten
  • 1 Grated rind of 1 Lemon
  • 4 Tbsp. Fresh Lemon Juice
  • ¼ cup Flour
  • 2 cup Sugar
  • 1 tsp. Baking Powder
  1. Mix crust ingredients with pastry blender or food processor until mixture resembles small crumbs. Pat into 8x16 pan. Bake 15 min. at 350F
  2. While baking the crust, mix all of the lemon filling ingredients well.
  3. After baking the crust, pour the filling over the crust and return to oven for 25 minutes.
  4. Sift small amount of powdered sugar over all after baking. Cut when cooled slightly.
